Vincenzo started his career in 1983 where he studied Hotel Management. He then gained his Diploma in Cookery and Food Service at “E.n.a.p.” Professional Institute for Hotel and Catering Services Monte Ortobene – Nuoro, Italy in 1986.

He learnt his culinary skills early on working in some prestigious hotels and restaurants in Portofino, Rome, St. Moritz and the glamorous Gstaad. He was then invited to work in Barcelona and Hong Kong for his authentic Italian flare before heading into the exclusive world as a private chef in 2009.
Since then, he has been working for numerous Russian businessmen and their families based between Moscow, Italy and their private yachts. It was here where ‘Vinnie’ and I combined forces to incorporate healthy but tasty meals for those we were working with at the time. This professional relationship also tested my own resolve as his ridiculously delicious Crème Brûlée and Panna Cotta often made a secret appearance upstairs.
